Crumble cake

2 Cups crumbs of sweet biscuits

1 cup raisins, dates and figs chopped together

1 tbsp chocolate powder

2 tbsp butter or margarine

2 tbsp sugar

1 tbsp caramel syrup

Mix the last 3 ingredients together and heat slowly to melt the sugar. Then add biscuit crumbs followed by mixed fruit and chocolate powder. Press the mixture in 15 cm square tray. Allow to set completely for 4 to 6 hours, in the fridge. Cut into pieces and serve.

 

Stuffed french bread

1 long french bread

4 hard boiled eggs, chopped

2 cups cooked chicken, chopped

1 cup diced cheese

1 tbsp parsley, chopped

1 cup mayonnaise

1 tsp lemon juice

1 1/2 tsp gelatine

seasoning

Scoop out the inside of the bread. Combine eggs, chicken, cheese and parsley. Soak gelatine in little water for 5 minutes and then place the bowl of gelatine in hot water and stir the gelatine until it dissolves. Cool slightly. Mix it with the mayonnaise and  then add rest of the ingredients. Season well. Fill in the bread and cover the bread with foil or cling wrap and refrigerate. When serving take off the cover and slice and serve.

Orange coconut biscuits

125 gm butter

1 cup sugar

1 egg

1 cup coconut

2 tsp grated orange rind

2 cups self raising flour

A pinch salt

2 tbsp Orange juice

1/2 cup mixed peel, chopped finely

Cream butter and sugar until light and fluffy. Add egg and beat well. Mix in coconut and orange rind. Stir in sifted dry ingredients and orange juice. Roll into small lime size balls. Press one side of the ball in peel and place on  greased trays with peel side up. Bake in moderate oven until light golden brown (Almost 12-15 mins).
